Chilli Fried Seafood

Tools              

 Large Saucepan or
   Deep Fat Fryer
 Mixing Bowl

Ingredients         

 85g/3oz Squid Rings
 85g/3oz Prawns
 85g/3oz Large Mussels
 Oil for Frying

 BATTER
 225g/8oz Plain Flour
 2 Egg Yolks
 340ml/12floz Ice Cold Water
 1 Chilli
 Black Pepper


Method                                                                       

Heat the oil ready for frying.
Deseed chilli and chop finely.
In the mixing bowl, mix the flour, egg, chilli, black pepper and iced water together.
This batter should not be smooth.
Dip the seafood in to the batter then drop straight into the hot oil.
Fry until golden brown.
Do this in batches to avoid everything clumping together.
Dry on kitchen paper.
Serve with sweet chilli dipping sauce or soy sauce with chopped chillies.
